White Chocolate Blueberry Truffles

Creamy, dreamy no-bake truffles bursting with white chocolate and tangy freeze-dried blueberry flavor.

Ingredients

  • 9 oz. white chocolate-chopped into very small pieces
  • 5 Tablespoons unsalted butter-softened
  • 3 Tablespoons heavy cream
  • 1.2 oz. freeze dried blueberries- powdered
  • ¼ cup powdered sugar

Instructions

  1. Simmer heavy cream in a small saucepan.
  2. Remove the saucepan from heat.
  3. Add softened butter to the cream.
  4. Stir until butter is completely melted and combined with heavy cream.
  5. Add powdered dried blueberries to the mixture.
  6. Stir to combine the blueberry mixture.
  7. Set the blueberry mixture aside.
  8. Prepare a double boiler by placing a heatproof bowl over a pot of simmering water.
  9. Add chopped white chocolate to the bowl.
  10. Melt the white chocolate over the double boiler, stirring casually.
  11. Continue stirring until the chocolate is smooth and completely melted.
  12. Ensure the chocolate does not heat above 105°F.
  13. Gently stir the lukewarm blueberry mixture into the melted chocolate.
  14. Combine until thoroughly mixed.
  15. Cool the truffle mixture to room temperature.
  16. Cover the mixture with plastic wrap.
  17. Refrigerate until firm enough to roll into balls (2-3 hours or overnight).
  18. During cooling, remove the mixture from the fridge periodically.
  19. Stir the mixture with a fork to prevent fat separation.
  20. Cover with plastic wrap and return to the fridge after stirring.
  21. Scoop out approximately 1-inch portions of the mixture.
  22. Roll each portion into a 1-inch ball.
  23. Clean your hands with a paper towel after each truffle if the mixture sticks too much.
  24. Alternatively, dust your hands with powdered sugar to prevent sticking.
  25. Roll each truffle into powdered sugar to coat them well.
  26. Store the truffles in the fridge in an airtight container for up to 1 week.
  27. For longer storage, freeze the truffles.

Notes

Use high-quality white chocolate for the best flavor.
Do not overheat the white chocolate to prevent seizing.
Ensure freeze-dried blueberries are powdered very finely.
Chill the mixture thoroughly for easier rolling.
