Super easy, soft, and fudgy lemon cookies with a sweet glaze, perfect for a quick and delightful treat.

Ingredients

  • Lemon cake mix – 1 box (15.25 oz)
  • Cream cheese, softened – 8 oz
  • Unsalted butter, softened – ¼ cup
  • Egg, room temperature – 1 large
  • Vanilla extract – 1 teaspoon
  • Powdered sugar – ½ cup (for rolling)
  • Butter – 2 tablespoons (for glaze)
  • Powdered sugar – 1 cup (for glaze)
  • Milk – 2–3 tablespoons
  • Vanilla extract – ½ teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl or stand mixer, combine the lemon cake mix, softened cream cheese, softened butter, room temperature egg, and 1 teaspoon vanilla extract.
  3. Mix until all ingredients are fully incorporated and the dough is thick and sticky.
  4. Use a medium cookie scoop (about 1½ tablespoons) to portion out the dough.
  5. Roll each dough ball generously in ½ cup powdered sugar until completely coated.
  6. Place the coated dough balls onto a baking sheet lined with parchment paper.
  7. Bake for 9–10 minutes, until the cookies are puffed and cracked but still soft in the center.
  8. Remove from the oven and allow the cookies to cool completely on the baking sheet before glazing.
  9. Melt 2 tablespoons of butter in a small bowl.
  10. Whisk in 1 cup powdered sugar, ½ teaspoon vanilla extract, and 2-3 tablespoons of milk until smooth.
  11. Use 2 tablespoons of milk for a thicker glaze suitable for piping, or 3 tablespoons for a thinner glaze for dipping.
  12. Drizzle or dip the cooled cookies in the prepared glaze.
  13. Allow the glaze to set before serving the cookies.

Notes

Full-fat cream cheese gives the fudgiest texture.
Using a cookie scoop is highly recommended for sticky dough.
Do not overbake; cookies should remain soft when removed from the oven.
Allow cookies to cool fully before glazing to prevent the icing from sliding off.
