  • 1 Stick butter softened
  • 1/4 Cup cream cheese softened
  • 1 1/2 Cups granulated sugar
  • 2 Large eggs
  • 1 Teaspoon vanilla extract
  • 1 Teaspoon almond extract
  • 2 1/2 Cups all purpose flour
  • 2 Teaspoons corn starch
  • 1 Teaspoon baking soda
  • 1/4 Teaspoon salt
  • 1 Cup sprinkles nonpareils

Instructions

  1. In a bowl of a stand mixer fitted with a paddle attachment, or a large bowl using a hand mixer, combine the softened butter, softened cream cheese, granulated sugar, large eggs, vanilla extract, and almond extract.
  2. Beat the mixture until it is light and fluffy, about 5 minutes.
  3. Scrape down the sides of the bowl with a spatula.
  4. Add the all-purpose flour, corn starch, baking soda, and salt to the bowl.
  5. Mix on low to medium speed for one minute, until all ingredients are just combined.
  6. Cover the dough and refrigerate for two hours.
  7. When the dough is done chilling, preheat your oven to 350 degrees F (175 C).
  8. Line two baking sheets with parchment paper or spray them with non-stick cooking spray.
  9. Pour the sprinkles into a medium bowl.
  10. Roll tablespoon-sized balls of dough.
  11. Roll each dough ball into the sprinkles until coated.
  12. Place the sprinkle-coated dough balls onto the prepared baking sheets, spacing them 2 inches apart.
  13. Bake for 9-12 minutes.
  14. The cookies should not turn golden brown and will still look wet in the center when removed from the oven.
  15. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
