These classic soft and chewy sugar cookies are incredibly easy to make and guaranteed to be a crowd-plepleaser. Perfect for any occasion!

Ingredients

  • 2 ½ cups (300g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter (1 ½ sticks of butter), softened at room temperature but still slightly cool
  • 1 ¼ cups (250g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • ¼ cup (50g) granulated sugar for rolling

Instructions

  1. Preheat your oven to 350° F.
  2. Line baking sheets with parchment paper.
  3. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  4. In a large bowl or the bowl of a stand mixer, beat the unsalted butter and 1 ¼ cups granulated sugar together on low speed, then increase to medium-high speed until the mixture is creamy.
  5. Add the large egg, egg yolk, and vanilla extract to the butter mixture.
  6. Mix on medium speed until all ingredients are incorporated, scraping down the sides of the bowl as needed.
  7. Gradually add the dry ingredients to the wet ingredients.
  8. Mix on low speed until just combined to form a fairly firm dough.
  9. Roll the dough into 1-inch balls.
  10. If desired, roll each dough ball in the remaining ¼ cup granulated sugar for rolling.
  11. Place the sugar-coated dough balls on the parchment-lined baking sheet, ensuring they are about 3 inches apart.
  12. Bake one pan of cookies at a time for 8-10 minutes.
  13. Bake until the tops are almost set and the bottoms are light golden brown.
  14. Carefully remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the dough once flour is added to prevent tough cookies.
For the chewiest cookies, pull them out of the oven when the edges are set but the centers still look slightly soft.
Make sure your butter is softened but still slightly cool, not melted, for the best texture.
Baking one sheet at a time helps ensure even baking for all your cookies.
