  2. Place the Golden Oreos in a food processor.
  3. Pulse the cookies until they are broken down into fine crumbs.
  4. Place the softened cream cheese in a large bowl.
  5. Use an electric mixer to beat the cream cheese until smooth and creamy.
  6. Pour in the cookie crumbs and 3 teaspoons of cinnamon into the cream cheese.
  7. Stir to combine the mixture until it is thick and cohesive.
  8. Use a 1 tablespoon cookie scoop to portion out the filling.
  9. Roll each portion into a ball.
  10. Place the balls onto the prepared baking sheet.
  11. Freeze the truffle balls for 10-15 minutes.
  12. In a medium bowl, heat 20 ounces of white chocolate wafers until smooth.
  13. Stir 1 teaspoon of cinnamon into the melted chocolate.
  14. Set aside about ½ cup of the cinnamon-white chocolate mixture for later.
  15. In a small bowl, combine the granulated sugar and the remaining ½ teaspoon of cinnamon.
  16. Using a fork, dip a chilled truffle into the melted wafers.
  17. Allow the excess chocolate to drip back into the bowl.
  18. Use a toothpick to gently move the truffle off the fork onto the prepared baking sheet.
  19. Continue dipping the remaining truffles.
  20. Place the ½ cup of reserved cinnamon-white chocolate mixture into a plastic bag.
  21. Cut off the tip of the plastic bag.
  22. Drizzle the reserved mixture over the coated truffles.
  23. Sprinkle the truffles with the cinnamon sugar mixture.
  24. Refrigerate or freeze the truffles for 5-10 minutes until the coating sets.

Notes

Chill truffles thoroughly before dipping to prevent crumbling.
Melt white chocolate gently to avoid seizing.
