These no-bake Ritz Cracker Christmas Cookies are a delightful sweet and salty treat perfect for holiday gatherings, featuring a creamy peanut butter filling dipped in white chocolate and festive sprinkles.

  • 2 sleeves Ritz Crackers, ~60 crackers
  • 20 oz. Ghirardelli white chocolate melting wafers
  • 1-2 Tbsp coconut oil (optional)
  • 1 cup creamy peanut butter (or nut butter of choice)
  • 1/4 cup festive holiday sprinkles
  • flaky sea salt, for finishing

Instructions

  1. Line a cookie sheet with parchment paper.
  2. Lay out 1 sleeve of Ritz crackers with the flat side facing up on the prepared cookie sheet.
  3. Spread approximately 2 teaspoons of peanut butter on each cracker.
  4. Carefully place another cracker on top of each peanut butter-covered cracker to create a sandwich, with the rounded side up.
  5. Place the white chocolate melting wafers in a microwave safe bowl.
  6. Heat the white chocolate for 1 minute.
  7. Stir the white chocolate.
  8. Heat for another minute and stir again until melted and smooth.
  9. Add 1-2 tablespoons of coconut oil if needed to thin the chocolate, stirring until smooth.
  10. Dunk each peanut butter sandwich cookie into the melted white chocolate, ensuring it is completely coated.
  11. Use a fork to lift the cookie from the chocolate, tapping off any excess melted chocolate.
  12. Set the coated cookie back on the parchment paper-lined cookie sheet.
  13. Drizzle any extra white chocolate on top of the cookies, if desired.
  14. Finish the cookies immediately with festive holiday sprinkles.
  15. Sprinkle flaky sea salt over the cookies.
  16. Repeat the process with the remaining cookies.
  17. Allow the chocolate to set up completely.
  18. Serve and enjoy!

Use good quality melting wafers for the smoothest coating.
Don’t overheat the chocolate; melt in short intervals.
Add sprinkles and sea salt immediately after dipping before the chocolate sets.
