Easy, no-bake peanut butter snowballs coated in white chocolate, perfect for holidays or a sweet treat.

  • 1 cup creamy peanut butter
  • 2 tablespoons butter softened
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered sugar
  • 1 cup graham cracker crumbs
  • 8 ounces white chocolate bark or white chocolate bar or chips
  • Holiday sprinkles optional

Instructions

  1. In a large mixing bowl, combine the peanut butter, softened butter, and vanilla extract.
  2. Mix until all ingredients are well combined and smooth.
  3. Add the powdered sugar to the peanut butter mixture.
  4. Add the graham cracker crumbs to the mixture.
  5. Stir until the powdered sugar and graham cracker crumbs are completely blended into the peanut butter mixture.
  6. Line a baking sheet with parchment paper.
  7. Scoop out 1 tablespoon portions of the peanut butter mixture.
  8. Roll each portion into a smooth ball.
  9. Place the rolled balls onto the prepared baking sheet.
  10. Refrigerate the peanut butter balls for 30 minutes to chill.
  11. Place the white chocolate bark in a microwave-safe bowl.
  12. Heat the white chocolate in the microwave for 30 seconds.
  13. Stir the chocolate well.
  14. Repeat heating for 30 seconds and stirring until the chocolate is completely melted and smooth.
  15. Dip each chilled peanut butter ball into the melted white chocolate, using a fork or toothpick.
  16. Lift the truffle out of the white chocolate.
  17. Tap the truffle gently on the side of the bowl to allow any excess white chocolate to drip off.
  18. Place the dipped ball back onto the parchment-lined baking sheet.
  19. Repeat the dipping process with all remaining truffles.
  20. To decorate, place any remaining melted white chocolate into a plastic baggie or piping bag.
  21. Cut a small corner off the baggie.
  22. Drizzle the white chocolate over the dipped truffles.
  23. Immediately top with festive holiday sprinkles, if desired.
  24. Place the decorated snowballs back into the refrigerator for at least 15 minutes to set the chocolate.

Notes

Ensure peanut butter balls are well chilled before dipping for best results.
Melt white chocolate in short bursts to prevent seizing.
Use a fork or toothpick for easy dipping and minimal mess.
Store in an airtight container in the refrigerator for up to two weeks.
