  • 1 ¾ cups (350g) granulated sugar
  • ½ cup (118ml) nonfat milk
  • ½ cup (133g) creamy peanut butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 cups (243g) quick cooking oats

Instructions

  1. Line two cookie sheets with parchment paper.
  2. Measure all ingredients and have them ready before starting.
  3. Melt the diced butter in a 3-quart saucepan over medium heat.
  4. Stir in the granulated sugar.
  5. Stir in the nonfat milk.
  6. Whisk the mixture until it is smooth.
  7. Bring the mixture to a boil.
  8. Boil the mixture for about 1 ½ minutes, stirring occasionally, or until it reaches 230°F on a candy thermometer.
  9. Remove the saucepan from the heat.
  10. Stir in the creamy peanut butter.
  11. Stir in the salt.
  12. Stir in the vanilla extract.
  13. Stir in the quick cooking oats until well combined.
  14. Use a cookie scoop to drop 2-tablespoon sized balls of cookie mixture onto the prepared baking sheets.
  15. Let the cookies sit at room temperature to set.
  16. Alternatively, chill the cookies in the refrigerator to harden quicker.
