These classic oatmeal cookies are wonderfully soft, chewy, and spiced, perfect for a cozy treat or sharing with loved ones.

  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup (226g) unsalted butter softened
  • 1 ½ cups (300g) packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ¼ cups (320g) quick cooking oats
  • 1 ½ cups mix-ins (optional)

Instructions

  1. Whisk together the flour, cinnamon, salt, and baking soda in a medium bowl.
  2. Set the dry ingredients aside.
  3. Cream the softened butter and packed brown sugar in the bowl of a stand mixer fitted with the paddle attachment until smooth, about 1-2 minutes.
  4. Mix in the eggs one at a time.
  5. Beat in the vanilla extract until smooth.
  6. Gradually mix in the reserved dry ingredients until just combined.
  7. Add the quick cooking oats to the dough.
  8. Stir in your desired mix-ins, if using.
  9. Scoop 2 tablespoon sized balls of dough.
  10. Place the dough balls on a cookie sheet lined with parchment or wax paper.
  11. Cover the cookie sheet with plastic wrap.
  12. Chill the dough for at least 30 minutes in the refrigerator.
  13. Preheat your oven to 350°F (175°C) when ready to bake.
  14. Line two cookie sheets with parchment paper or a Silpat baking mat.
  15. Place the chilled cookie dough balls 2 inches apart on the prepared cookie sheets.
  16. Bake for 10-12 minutes, until the bottom is slightly golden.
  17. Cool the baked cookies on the cookie sheets for 10 minutes.
  18. Transfer the cookies to a wire rack to cool completely.
