Quick and easy chewy no-bake cookies with a hint of cheesecake, perfect for a fast sweet treat.

Ingredients

  • ¾ cup salted butter
  • 2 cups granulated sugar
  • ⅔ cup whole milk
  • ½ teaspoon vanilla extract
  • 4 cups quick-cooking oats
  • 3.4 ounces instant cheesecake pudding mix
  • ¼ cup powdered milk
  • sprinkles, for garnish (optional)

Instructions

  1. Line a large baking sheet with parchment paper or wax paper. Set aside.
  2. Melt butter in a large saucepan over medium-high heat.
  3. Add granulated sugar and whole milk to the melted butter.
  4. Bring the mixture to a boil, whisking constantly.
  5. Continue to cook and stir for 1 minute once boiling.
  6. Remove the saucepan from heat.
  7. Quickly stir in vanilla extract.
  8. Add quick-cooking oats to the saucepan.
  9. Add instant cheesecake pudding mix to the saucepan.
  10. Add powdered milk to the saucepan.
  11. Stir until all ingredients are well incorporated.
  12. Use a spoon or cookie scoop to drop 1-2 tablespoon portions of the mixture onto the prepared baking sheet.
  13. Repeat until all mixture is used.
  14. If desired, decorate cookies with sprinkles while the mixture is still wet.
  15. Allow cookies to set until firm, about 1 hour.
  16. Serve as desired.

Notes

Work quickly once you remove the mixture from heat, as it sets fast.
Ensure you use quick-cooking oats, not old-fashioned, for the correct texture.
Boiling for exactly 1 minute is crucial for the cookies to set properly.
