  • 1 tablespoon vanilla protein powder
  • 1 tablespoon pumpkin pie spice
  • 1 cup cashew butter
  • 1 tablespoon maple syrup
  • 2 tablespoons pumpkin puree

Instructions

  1. Combine flour, protein powder, and pumpkin pie spice in a large bowl.
  2. Stir dry ingredients together until well mixed.
  3. Combine cashew butter, maple syrup, and pumpkin puree in a separate bowl.
  4. Microwave the cashew butter mix for 30 seconds to 1 minute.
  5. Heat until the mixture is easy to stir and combine.
  6. Pour the cashew butter mix into the dry ingredient mix.
  7. Stir to combine all ingredients thoroughly.
  8. Freeze the dough for about 10 minutes to firm it up.
  9. Line a baking sheet with parchment paper.
  10. Roll the dough into approximately 20 balls.
  11. Arrange the balls on the prepared baking sheet.
  12. Refrigerate until fully chilled.
  13. Store in an airtight container in the refrigerator.

Notes

Ensure you use 100% pure pumpkin puree, not pie filling.
Chill the dough in the freezer for easy rolling.
