Creamy, tangy no-bake cheesecake layered with a buttery graham cracker crust and sweet cherry pie filling, all in individual cups.

  • 1 ½ cups finely crushed graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 7 tablespoons butter melted
  • 1 8 ounce package cream cheese, softened
  • 1 14 ounce can sweetened condense milk
  • ⅓ cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 21 ounce can cherry pie filling

Instructions

  1. Combine the graham cracker crumbs, granulated sugar, and melted butter in a small mixing bowl.
  2. Set the crumb mixture aside.
  3. Beat the softened cream cheese with an electric mixer on medium speed in a medium mixing bowl until smooth.
  4. Beat in the sweetened condensed milk until well combined.
  5. Add the freshly squeezed lemon juice and vanilla extract to the cream cheese mixture.
  6. Stir the cream cheese mixture well to combine all ingredients.
  7. Set 6 plastic, 9 ounce punch cups on the counter or a cookie sheet.
  8. Scoop 2 tablespoons of the graham cracker crumb mixture into the bottom of each cup.
  9. Press the crumb mixture down lightly in each cup.
  10. Add 3 tablespoons of the cheesecake mixture to each cup.
  11. Spread the cheesecake mixture out evenly in each cup.
  12. Evenly distribute half of the cherry pie filling between the 6 cups.
  13. Reserve the other half of the pie filling for another layer.
  14. Sprinkle 2 tablespoons of the graham cracker crumb mixture over the cherry layer in each cup.
  15. Divide the remaining cheesecake mixture between the 6 cups.
  16. Spread the remaining cheesecake mixture out evenly in each cup.
  17. Divide the reserved cherry pie filling evenly between the 6 cups.
  18. Sprinkle the top of each parfait with a little graham cracker crumb mixture.
  19. Serve immediately or chill for up to 24 hours before serving.
