Delicious and easy-to-make, these keto pop tart bars are a perfect low-carb treat with a flaky crust and fruity jam filling.

  • 2 ½ cups almond flour
  • ⅓ cup erythritol sweetener
  • 2 tablespoons coconut flour
  • ¼ teaspoon salt
  • ½ cup butter melted
  • ½ teaspoon vanilla extract
  • ¾ cup sugar free raspberry jam
  • ⅔ cup Swerve Confectioners
  • 2 to 3 tbsp heavy whipping cream
  • 2 tsp keto sprinkles

Instructions

  1. Preheat the oven to 350ºF.
  2. Line an 8×8 inch metal baking pan with parchment paper, ensuring overhanging edges.
  3. In a large bowl, whisk together the almond flour, erythritol sweetener, coconut flour, and salt.
  4. Stir in the melted butter and vanilla extract until the dough begins to clump together.
  5. Press a little over half of the dough into the prepared baking pan.
  6. Bake the crust for 10 minutes.
  7. Remove the crust from the oven and let it cool for 10 minutes.
  8. Spread the sugar-free raspberry jam evenly over the cooled crust.
  9. Take the remaining crust mixture and sprinkle it over the jam to cover it completely.
  10. Press lightly with your hands to even out the top crust.
  11. Bake for another 20 to 25 minutes, until the topping is golden brown.
  12. Remove the pan from the oven and let the bars cool completely.
  13. Refrigerate the cooled bars for 1 hour to firm up.
  14. In a medium bowl, whisk the Swerve Confectioners with 2 tablespoons of heavy whipping cream.
  15. Add more cream or water as needed to thin out the glaze to a spreadable consistency.
  16. Spread the glaze over the chilled bars.
  17. Sprinkle with keto sprinkles.
  18. Return the bars to the fridge for 30 minutes to allow the glaze to set.
  19. Remove the bars from the pan by lifting the parchment paper edges.
  20. Cut into 16 bars.

Notes

Ensure bars are fully cooled before slicing for best results.
Warm the jam slightly before spreading for easier application.
Use parchment paper overhangs to easily remove bars from the pan.
Adjust glaze consistency by adding more powdered sweetener or liquid as needed.
