Spooky and sweet, these buttery thumbprint cookies are filled with raspberry jam and decorated with melted chocolate to resemble Jack Skellington.

Ingredients

  • 1 1/2 cups (200g) all-purpose flour
  • 1/2 cup (60g) confectioners’ sugar
  • 0.9 oz. (25g) cornstarch
  • 1/2 cup (120g) butter, softened
  • 1 medium egg
  • 1 tsp. vanilla extract
  • some raspberry jam
  • some melted chocolate

Instructions

  1. Combine all-purpose flour, confectioners’ sugar, and cornstarch in a large bowl.
  2. Add the softened butter to the dry ingredients.
  3. Break the butter into pea-sized pieces using a pastry blender or your fingertips.
  4. Add the medium egg and vanilla extract to the mixture.
  5. Mix well until a dough forms.
  6. Knead the dough gently until it is smooth; do not overwork.
  7. Wrap the dough tightly in plastic wrap.
  8. Place the wrapped dough in the fridge for at least 1 hour, or overnight.
  9. Preheat your oven to 180°C (350°F).
  10. Line a baking sheet with baking parchment paper.
  11. Stir the raspberry jam, or warm it slightly to make it easier to handle.
  12. Set the jam aside.
  13. Remove the chilled dough from the fridge.
  14. Divide the dough into approximately 15 equal pieces.
  15. Shape each piece of dough into a small ball.
  16. Gently flatten each ball slightly.
  17. Place the flattened dough balls onto the prepared baking sheet, leaving some space between each.
  18. Use your finger or the end of a wooden spoon to press two small indentations into each cookie for the eyes.
  19. Fill each indentation with a small amount of raspberry jam.
  20. Bake the cookies for about 10-12 minutes, or until lightly golden.
  21. Remove the cookies from the oven.
  22. Let the cookies cool completely on a wire rack.
  23. Melt a small amount of chocolate for decoration.
  24. Transfer the melted chocolate into a small piping bag (or a Ziploc bag with a tiny corner snipped).
  25. Decorate each cooled cookie with a mouth and seams, resembling Jack Skellington.
  26. Let the chocolate decoration dry completely before storing.

Notes

Ensure butter is at room temperature for a smooth dough.
Chill the dough for at least 1 hour; this prevents spreading.
Do not overwork the dough to keep cookies tender.
Let cookies cool completely before decorating to prevent chocolate smudging.
