A warm, comforting baked oatmeal bursting with classic gingerbread spices and tender diced pear, perfect for cozy mornings.

  • 2 ¾ cups old-fashioned rolled oats
  • 1 ¼ teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt
  • 3 tablespoons pure maple syrup
  • 2 tablespoons molasses
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • 1 ¼ cups milk
  • ¼ cup melted butter or coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 cup finely diced pear
  • ¼ cup chopped pecans, plus more for topping toasted, divided

Instructions

  1. Preheat the oven to 375℉ (190°C).
  2. Mist a 9×9 or 8×8-inch baking dish with nonstick cooking spray.
  3. In a large bowl, combine the oats, cinnamon, ginger, nutmeg, baking powder, salt, maple syrup, molasses, applesauce, eggs, milk, melted butter or coconut oil, and vanilla extract.
  4. Stir until all ingredients are well combined.
  5. Fold in the 1 cup of finely diced pear.
  6. Fold in ¼ cup of the chopped pecans.
  7. Transfer the batter to the prepared baking dish.
  8. Top with a few additional pear slices.
  9. Sprinkle with additional toasted pecans.
  10. Bake for 30-35 minutes, or until the center is set.
  11. Remove the pan from the oven.
  12. Let the baked oatmeal sit for 10 minutes before serving.
  13. Garnish servings as desired with plain yogurt, whipped cream, maple syrup, toasted pecans, or ground cinnamon.

Notes

Use old-fashioned rolled oats for the best texture; instant oats will make it mushy.
For extra flavor, lightly toast your pecans before adding them.
Molasses is key for authentic gingerbread flavor, so don’t skip it.
This recipe can be assembled the night before and baked in the morning for an easy breakfast.
