Hearty individual pies filled with savory Irish stew and topped with flaky, golden puff pastry, perfect for a comforting meal.

  • 1 pack puff pastry
  • 30 oz irish stew
  • canola oil spray
  • 1/4 tsp garlic powder
  • 1 large egg
  • 2 tsp water
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 3 tbsp black sesame seeds

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Drain the Irish stew thoroughly to remove excess thin liquid, using a fine-mesh strainer and gently pressing the solids.
  3. In a small bowl, whisk together the large egg with 2 teaspoons of water until well-beaten and glossy; set aside.
  4. In another small bowl, combine the salt, pepper, and garlic powder.
  5. Lightly spray your pie tins with canola oil.
  6. Remove the puff pastry from its package and let it sit at room temperature for 2-3 minutes to soften slightly.
  7. Cut the pastry into pieces sized for your pie tins, needing one piece for each base and one for each top.
  8. Press the pastry bases gently into the oiled tins, letting them settle without stretching.
  9. Divide the drained stew evenly among the pie tins, filling each about halfway.
  10. Lightly brush the rim of each pastry base with some of the prepared egg wash.
  11. Place the pastry tops over each filled pie and gently press the edges together, sealing them firmly.
  12. Brush the top of each pastry generously with the remaining egg wash.
  13. Sprinkle the black sesame seeds evenly over the tops, pressing them gently to adhere.
  14. Using a sharp knife, cut 2-3 small slits in the center of each pastry top to allow steam to escape.
  15. Bake at 180°C (350°F) for 40 minutes until the pastry is deeply golden and puffed.

Notes

Ensure the Irish stew is very well-drained to prevent a soggy pie bottom.
Do not overfill the pie tins; about halfway is perfect to prevent overflow.
Letting the puff pastry soften slightly at room temperature makes it much easier to handle.
Use a sharp knife for clean slits in the pastry tops to ensure proper steam release.
