A festive and easy-to-make cake featuring vibrant red and green Jello soaked into a moist white cake, topped with fluffy Cool Whip and sprinkles.

  • 1 box white cake mix (plus eggs, water, and oil as directed on box)
  • 3 large eggs
  • 1 cup water
  • ⅓ cup vegetable oil or melted butter
  • ½ (3-ounce) box strawberry Jello gelatin
  • ½ (3-ounce) box lime Jello gelatin
  • 1 cup boiling water (divided)
  • 1 (8-ounce) tub Cool Whip whipped topping, thawed
  • Holiday sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking pan.
  3. In a large bowl, combine the white cake mix, eggs, water, and oil (or butter).
  4. Mix until the batter is smooth, about 2 minutes.
  5. Pour the cake batter into the prepared pan.
  6. Bake for 28–30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the cake in the pan for 10–15 minutes.
  8. Using the handle of a wooden spoon, poke holes evenly over the entire cake, about 1 inch apart.
  9. Be careful not to poke all the way through to the bottom of the cake.
  10. In one small bowl, dissolve the strawberry Jello gelatin in ½ cup of boiling water.
  11. Stir until the strawberry Jello is completely dissolved.
  12. In a second small bowl, dissolve the lime Jello gelatin in the remaining ½ cup of boiling water.
  13. Stir until the lime Jello is completely dissolved.
  14. Spoon both gelatin mixtures over the cake, alternating red and green sections for a festive look.
  15. Refrigerate the cake for at least 2 hours, or until the Jello is fully set and the cake is cold.
  16. Spread the thawed Cool Whip evenly over the chilled cake.
  17. Decorate the cake with holiday sprinkles.
  18. Slice, serve, and enjoy this vibrant, refreshing Christmas dessert!
