A deliciously moist yellow cake packed with fresh peaches and topped with a rich, buttery brown sugar frosting.

Ingredients

  • 15 ounce yellow cake mix
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup peach nectar or peach juice
  • 1 lb peeled and chopped peaches
  • drop orange food coloring, optional
  • 1/2 cup unsalted butter, cut in pieces
  • 1/2 cup heavy cream
  • 1 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 1/2 cups confectioner's sugar, sifted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly spray a 9×12 inch baking pan with non-stick spray.
  3. In a large bowl, combine the cake mix, eggs, vegetable oil, peach nectar or juice, and optional food coloring.
  4. Blend these ingredients together until they are well combined.
  5. Gently fold the peeled and chopped peaches into the cake batter.
  6. Pour the batter evenly into the prepared 9×12 inch pan.
  7. Bake for about 28 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  8. While the cake bakes, prepare the frosting.
  9. In a saucepan, combine the unsalted butter pieces, heavy cream, and packed brown sugar.
  10. Bring the mixture to a boil, stirring constantly to prevent burning.
  11. Immediately remove the saucepan from the heat.
  12. Stir in the vanilla extract.
  13. Add the sifted confectioner's sugar to the saucepan.
  14. Whisk until the frosting is well blended and all sugar lumps have disappeared.
  15. If the frosting becomes too thick, you can return it to very low heat briefly to loosen it.
  16. Pour the warm frosting evenly over the baked cake as soon as it comes out of the oven.
  17. Try to coat the cake evenly on the first pour, as the frosting will set quickly.
  18. Allow the frosting to harden at room temperature or in the refrigerator before cutting and serving.

Ensure all cold ingredients for the cake batter are at room temperature for a smoother mix.
Sift your confectioner’s sugar to guarantee a lump-free brown sugar frosting.
Stir the frosting continuously while boiling to prevent scorching the brown sugar.
