An easy, no-bake dessert featuring creamy vanilla pudding layers, softened graham crackers, and a rich homemade chocolate fudge topping.

  • 2 (3.4 oz.) boxes vanilla instant pudding
  • 2 1/2 c. milk
  • 1 (8 oz.) container Cool Whip non-dairy whipped topping (or 3 c. homemade whipped cream)
  • 1 (14.4 oz) box graham crackers
  • 1/3 c. unsweetened cocoa powder
  • 1 c. granulated sugar
  • 1/4 c. milk
  • 1/2 c. butter (1 stick)
  • 1 tsp. vanilla extract

Instructions

  1. Combine dry pudding mix and 2 1/2 cups milk in a bowl.
  2. Beat the pudding mixture until well mixed and starting to thicken.
  3. Gently stir in the Cool Whip until combined.
  4. Place a single layer of graham crackers in the bottom of a 9×13 inch dish.
  5. Spread 1/2 of the pudding mixture evenly over the first layer of graham crackers.
  6. Place another layer of graham crackers over the pudding mixture.
  7. Spread the remaining 1/2 of the pudding mixture over the second layer of graham crackers.
  8. Top with a final layer of graham crackers.
  9. In a medium-sized saucepan, combine cocoa powder, 1 cup granulated sugar, and 1/4 cup milk.
  10. Bring the mixture to a full rolling boil over medium heat, stirring very frequently.
  11. Boil for about 1 minute, continuing to stir.
  12. Remove the saucepan from the heat.
  13. Cool the chocolate mixture for 1 minute.
  14. Add butter and vanilla extract to the saucepan.
  15. Stir until the butter is completely melted and the topping is smooth.
  16. Pour the chocolate topping over the top layer of graham crackers in the dish.
  17. Spread the chocolate topping evenly to completely cover the graham crackers.
  18. Cover the dessert dish tightly with plastic wrap.
  19. Refrigerate the dessert overnight (at least 8 hours) to allow it to set.

Notes

Ensure you use instant pudding, not cook-and-serve, for proper setting.
Stir the chocolate topping constantly while boiling to prevent scorching.
For best results, allow the dessert to chill overnight; this softens the graham crackers beautifully.
If using homemade whipped cream, ensure it’s sweetened and about 3 cups.
