A wonderfully light and airy no-bake cake made with just three simple ingredients for a refreshing strawberry treat.

  • 1/2 cup (77 g) chopped strawberries, chopped into 1/2 inch cubes
  • 1 1/3 cups (313 g) unsweetened applesauce
  • 4 1/2 tsp (15 g) unflavored gelatin powder

Instructions

  1. Line an 8-inch or 9-inch square pan with a large sheet of parchment paper, ensuring it covers the sides and bottom.
  2. Add the chopped strawberries and unsweetened applesauce to a blender.
  3. Blend on high speed until the strawberries are fully pureed and the mixture is uniform in color.
  4. Pour the strawberry puree into a large heat-proof mixing bowl.
  5. Sprinkle the unflavored gelatin powder evenly across the surface of the puree.
  6. Whisk until the gelatin is fully incorporated into the puree.
  7. Set up a double boiler on the stove by placing the mixing bowl over a pot of simmering water.
  8. Heat the mixture gently, whisking constantly, until the gelatin is completely dissolved and the mixture becomes thinner and more liquidy.
  9. Ensure the mixture feels warm to the touch but does not get hot or boil.
  10. Remove the bowl from the stove.
  11. Let the mixture sit on the counter for about 10 minutes to cool to room temperature.
  12. Pour the cooled mixture into the bowl of a stand mixer.
  13. Attach the wire whisk attachment to the stand mixer.
  14. Beat the mixture on the highest speed for approximately 15 minutes.
  15. Continue beating until the mixture quadruples in volume and resembles airy whipped cream.
  16. Stop the mixer and check if the wire whisk can hold a soft peak.
  17. Pour the whipped mixture into the prepared pan.
  18. Use a spatula to spread the mixture evenly across the pan and smooth the surface.
  19. Place the pan into the refrigerator for at least 1 hour to allow the cake to set completely.
  20. Keep the cake in the fridge until ready to serve.
  21. Before serving, you can decorate the cake with frosting or fresh fruit if desired.
  22. Slice the cake with a very large and sharp knife.
  23. Serve the cake chilled.
  24. Store any uneaten cake in the fridge in an airtight container.

Use ripe, sweet strawberries for the best flavor.
Ensure the gelatin mixture doesn’t boil on the double boiler; just warm enough to dissolve.
Whip for the full 15 minutes to achieve the best airy, cloud-like texture.
Chill the cake thoroughly for at least 1 hour before slicing for clean cuts.
